Herb Baked Tomatoes -An Organic and Vegan Recipe! Plus a perfect side dish for Meatless Monday...

Meatless Monday Recipe

Organic Herb Baked Tomatoes 

serves 2-4
Ingredients:
several medium sized tomatoes from Los Angeles Organic Farm
two teaspoons of your favorite dried or fresh organic herbs (mix to taste)
two teaspoons organic olive oil
sea salt and black pepper to taste

Preheat oven to 400 degrees F. In a small bowl mix herbs and olive oil, sea salt and black pepper. Select a baking sheet with at least 1/4 inch tall edges, a jelly roll pan also works well. Line with parchment paper or lightly oil. Cut tomatoes in half and arrange cut side up on baking sheet. Using a teaspoon, drop about half a teaspoon of the herb and olive oil mixture onto each tomato. Spread evenly on top with spoon. Bake tomatoes 30-40 minutes or until tender and juicy but still intact. Cool slightly before serving warm.

Goat Cheese & Vegetable Quesadilla -Great for Meatless Monday and it's Vegetarian!

Goat Cheese & Vegetable Quesadilla
serves 2-4  
Ingredients:
2 organic flour tortillas
1 medium green zebra tomato from Los Angeles Organic Farm, diced
2-3 tablespoons organic goat cheese
1/2 cup raw, organic kale from Los Angeles Organic Farm
1/6-1/4 small, organic white onion, diced
2 small cloves organic garlic, diced
1/4 teaspoon organic vegetable oil 
1/4 medium, organic red bell pepper

To start, wipe the inside of a wide and shallow pan with organic vegetable oil to make a thin coat. After the pan is hot add onions and garlic. Once onions start to look clear add the fresh kale and bell pepper. Heat until kale slightly wilts and bell pepper is warm but still crunchy. Heat a medium or large skillet to low. Add dry tortillas to warm slightly. Remove one tortilla. The remaining tortilla is the base for your quesadilla. Add hot vegetable mixture and spread evenly. Add small dollops of goat cheese to ensure it is included in every bite. Add your fresh, diced tomatoes on top and cover with remaining tortilla. Cover skillet and warm on very low heat for just a minute, until cheese is slightly warmed. This is best cut with a round pizza slicer. Serve warm and enjoy. This makes an excellent appetizer or snack and it's organic vegetarian!

Fresh Green Zebra Salsa Recipe -Organic, Raw, Vegan and Vegetarian Recipe for your Meatless Monday!

Fresh Green Zebra Salsa
serves 2-4

Ingredients:
4 green zebra tomatoes from Los Angeles Organic Farm, chopped
1/2 medium organic, white onion, finely chopped
2 cloves fresh, organic garlic, finely chopped
small squeeze fresh organic lemon juice
1/4 cup fresh, organic cilantro, chopped
1-2 fresh organic jalapeno peppers (to taste)
1/4-1/2 teaspoon dried, organic chili powder (to taste)
sea salt and organic black pepper to taste

Mix tomatoes, onion, garlic, jalapenos and cilantro in medium sized serving bowl. Squeeze lemon juice over mixture. Add dried chili powder, sea salt and black pepper. Mix again and taste. This great raw salsa can be made right before dinner since it has a very short prep time.

Bacon and Herb Goat Cheese Stuffed
Heirloom Tomato Appetizer

Ingredients:
organic bacon, well cooked, smoked works well
organic herb goat cheese
your favorite small tomatoes from Los Angeles Organic Farm
sea salt and organic black pepper, if needed

To start you'll need to core the tomatoes. If you have ever carved a pumpkin you may find the experience similar, just on a much smaller scale. With a small sharp knife slice a small ring into the top of the tomato, basically take the top off as you would a pumpkin. With your small knife (must be smaller than the opening in the tomato) lightly scrape the inside of the tomato out. This can be saved for another recipe or given to a dog as a treat (our dachshund loves it). In a small bowl crumble the bacon and add goat cheese. Mix until evenly combined. If salt and pepper is needed add now and mix again. Using your small knife, scoop the mixture and fill empty tomatoes carefully. This quick and easy appetizer will have everyone wanting more so be sure to make enough!

New Meatless Monday recipe for Fried Green Heirloom Tomatoes (all organic)!

Fried Green Heirloom Tomatoes
Servings 4-6
Ingredients:
2-3 med/lg green tomatoes, sliced thick
3 Tablespoons organic milk
2 Tablespoons organic sour cream
1 organic egg, beaten well
¼ cup organic all purpose flour, on a small plate
½ cup organic cornmeal
¼ cup organic all purpose flour
1 teaspoon sea salt, fine
¼ to ½ teaspoon fresh ground black pepper (to taste)
¼ teaspoon organic cayenne (optional, to taste)
organic vegetable oil for frying


Mix milk, sour cream and the well beaten egg in a shallow bowl. Set aside. In another bowl mix cornmeal, 1/4 cup flour, sea salt, pepper and cayenne. Mix well. Pour onto large plate.
Heat vegetable oil to 375 degrees F, ¼ inch deep in your pan. Arrange your plates and cutting board in a line near your stove. First should be your plate with tomato slices, next your small plate with just flour, after that your egg mixture, your cornmeal mixture and finally the hot pan with oil.
Cover the tomato slice in flour, then soak in egg mixture to coat completely. Set the wet tomato slice on the cornmeal mix and cover completely. It now goes right into the hot oil. Cook approximately 2 minutes per side, or until lightly golden brown. Remove onto a surface to drain, placing paper towels underneath to catch oil as it drips off. Pat very lightly to remove extra oil and serve warm. Enjoy!

Organic Turkey, Bacon and Heirloom Tomato Sandwich Recipe

Organic Turkey, Bacon and Heirloom Tomato Sandwich
Servings 1
Ingredients:
organic turkey breast (oven roasted to 180 degrees F), thick sliced
two slices of your favorite organic bread, lightly toasted
1-2 of your favorite Los Angeles Organic Farm heirloom tomatoes
2 slices organic bacon, thoroughly cooked
organic mayonnaise/mustard to taste

Starting with a lightly toasted bread will help your sandwich to stay together with these heavy ingredients.
Start by slicing the bread in half, down the middle. This is done first because cutting after the sandwich is assembled almost always makes things fall out or apart. Pile your turkey high and use thick slices of your favorite heirloom tomato. Our favorite Los Angeles Organic Farm tomatoes to use for this recipe are our green zebras. Their light and summery flavor really is the perfect compliment to this cold sandwich. If you will be packing this delicious sandwich 'to go' we recommend bringing these ingredients separately and building  just before you eat it. The tomatoes and condiments are best eaten just after applying. Enjoy!

Organic Grilled Tomato and Herb Goat Cheese Sandwich

Grilled Tomato and Herb Goat Cheese Sandwich
Servings 1
Ingedients:
2 slices of your favorite organic bread
1 tablespoon organic herb goat cheese
Los Angeles Organic Farm heirloom tomatoes
organic olive oil or butter for grilling
sea salt and pepper (optional)
Slice tomatoes to preferred thickness. Spread goat cheese evenly over 
one slice of bread. Add tomatoes and top with salt/pepper and other slice of bread. Grill in a medium/high pan in just enough olive oil or butter to coat the pan. When you have reached desired toast color remove and enjoy hot. We recommend using two of your favorite Los Angeles Organic Farm heirloom tomatoes to increase the flavor diversity. Enjoy!

Gotu Kola Fruit & Vegetable Smoothie (Vegan & Organic!)

Gotu Kola, Fruit & Vegetable Smoothie
(you will need a Vitamix or NutriBullet style juicing blender to complete this recipe)
Servings 2
Ingredients:
5-6 fresh Los Angeles Organic Farm gotu kola leaves with stems
half of one organic cucumber with peel on to retain nutrients
3/4 cup frozen organic strawberries
1/2 cup organic baby spinach
1/2 cup organic kale
one organic mango (peel and remove seed)
one ripe organic banana (peeled)
water (as needed to thin to desired consistency)

Add just a couple of ingredients at a time to ensure proper mixing. This will make a delicious and healthy juice for two with a slight smoothie consistency due to the frozen strawberries. Enjoy this raw, vegan treat with meals or as a cool treat! This is also a wonderful way to incorporate more vegetables into the diet of those who don't prefer to eat them.
Always be sure to rinse your produce thoroughly before consuming.

Gotu Kola Bruschetta Recipe (Vegan and Organic)

Gotu Kola Bruschetta
Serves 4-6 people

Ingredients:
  1 small organic french loaf or bread of your choice, cut into 1/2" slices
  1 tablespoon of olive oil
  1 medium organic heirloom tomato of your choice from Los Angeles Organic Farm, sliced
  5-6 medium sized fresh, organic Gotu Kola leaves from Los Angeles Organic Farm, chopped
  salt or balsamic vinegar (optional)

     Lay sliced bread on a baking sheet and slightly toast or brown in oven on broil (1-2 minutes). Once slightly toasted remove and lightly brush with olive oil. Add a slice of tomato and top with fresh, chopped Gotu Kola. Add salt or balsamic vinegar optionally to your specific taste.
